It is my husband’s birthday and he wanted German chocolate cake. It just didn’t come out the way I wanted but he is pleased with it anyway and is now eating a slice. I didn’t have the second 9 inch pan, so I had to wait for the first pan to cool and then I became impatient and tried to get it out too soon, and a piece of it crumbled. I was so frustrated because I wanted it to be perfect. But you know, he was happy with it anyway. Immediately, I began looking for better recipes for the butter pecan topping because I wanted the next one to be better and the next time, I will have the 9 inch pan.
The best present is he is still with me and hopefully, he will be cancer free in July. Tomorrow, I have my meeting with the VA clinic as part of the MOVE! Program as I am trying to lose the extra pounds I put on with the store and probably beginning the year in Abu Dhabi. I need to lose 30 lbs. to feel better. My body is off balance and I can feel it. I have been walking every day and eating more vegetables. Of course, I will have a piece of German chocolate cake tonight with a glass of milk.
I am still writing each day and coming up with some new stories. I took today off. Mike and I perused some thrift shops for treasures, books, and just to get out of the house. It was a very good day.
Living in the Middle East is difficult and a risk to health as well. The weather plays havoc even when the mind and spirit is willing. Cars take you everywhere and the temptation is to use a vehicle even for short errands.
But it is an experience that most people love. Will you be having a cup cake business there too ?

Yes, many people romanticize the time there, but it was anything but ideal. No, our cupcake business is closed. I did get the idea from the UAE from my time in 2010-11 but due to husband’s health, I can’t run it by myself. We did have a good run though~
