I call this a “cassoulet” because it is an easy meal to prepare.  I bake the mild sausage which makes it crisp according to the directions on the package.  In the pan, I combine diced apples, sweet onions, tomatoes, garlic after dousing the pan with olive oil.  optional: add black olives.  For the side dish, I heat up black beans. optional: grate parmesan cheese on top and serve.  Very easy and good.  Enjoy with a side of bavarian sweet mustard and red wine. It is also inexpensive and satisfying.
